Lightened Broccoli Salad

Ingredients
- Servings: 4
- 3 cups broccoli florets, small florette pieces
- 1/2 cup light mayonnaise
- 1/4 cup splenda sugar substitute
- 2 tablespoons rice wine vinegar
- 1/4 cup red onion, finely chopped
- 3 tablespoons dried craisins
- 2 tablespoons almonds, sliced
- 3 tablespoons cheddar cheese, shredded
Recipe
- 1 wash fresh broccoli, cut into small bite-sized pieces.
- 2 place in deep bowl.
- 3 add onion, crasins and almonds; toss.
- 4 in separate bowl, blend mayo, splenda & vinegar till smooth.
- 5 pour over broccoli mixture, toss well until coated.
- 6 sprinkle with cheese.
- 7 chill for at least 2 hours for flavors to blend.
