Greek Islands Salad

Ingredients

  • Servings: 6
  • 4 tomatoes, cored and quartered
  • 1 cucumber, peeled and sliced 1/4 inch thick
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 -3 anchovies (optional)
  • 12 black olives
  • 1 medium red onion, thinly sliced
  • 2 -4 tablespoons crumbled feta cheese
  • 3/4 cup italian dressing

Recipe

  • 1 combine everything except dressing in a large bowl. pour dressing over and toss.
