Lightened Broccoli Salad

Ingredients

  • Servings: 4
  • 3 cups broccoli florets, small florette pieces
  • 1/2 cup light mayonnaise
  • 1/4 cup splenda sugar substitute
  • 2 tablespoons rice wine vinegar
  • 1/4 cup red onion, finely chopped
  • 3 tablespoons dried craisins
  • 2 tablespoons almonds, sliced
  • 3 tablespoons cheddar cheese, shredded

Recipe

  • 1 wash fresh broccoli, cut into small bite-sized pieces.
  • 2 place in deep bowl.
  • 3 add onion, crasins and almonds; toss.
  • 4 in separate bowl, blend mayo, splenda & vinegar till smooth.
  • 5 pour over broccoli mixture, toss well until coated.
  • 6 sprinkle with cheese.
  • 7 chill for at least 2 hours for flavors to blend.
