Ingredients
- 4 large red potatoes, quartered and boiled
- 1/3 cup plain nonfat yogurt
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 cup fresh parsley leaves, chopped
- 1 green onion, sliced
- salt and pepper
Recipe
- 1 cut potatoes into 1 inch chunks and mash a few of them.
- 2 mix together other ingredients and toss with potatoes. chill.
