Light Parsley Lemon Potato Salad

Ingredients

  • 4 large red potatoes, quartered and boiled
  • 1/3 cup plain nonfat yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 cup fresh parsley leaves, chopped
  • 1 green onion, sliced
  • salt and pepper

Recipe

  • 1 cut potatoes into 1 inch chunks and mash a few of them.
  • 2 mix together other ingredients and toss with potatoes. chill.
