Lebanese Fattoosh

Ingredients

  • Servings: 4
  • 2 pita breads, halved
  • 1 head romaine lettuce, chopped
  • 2 tomatoes, diced
  • 2 green onions, thinly sliced
  • 1 cucumber, diced
  • 1 cup sliced green olives
  • 4 radishes, sliced
  • 1 green or red bell pepper, chopped
  • 1/4 cup chopped fresh mint
  • 2 tablespoons sumac
  • 1 tablespoon salt, or to taste
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil

    Preparation Time: 25 mins Cook Time: 5 mins Ready Time: 30 mins

  • preheat oven to 425 degrees f (220 degrees c).
  • place pita breads on a baking sheet and bake in preheated oven until golden and crispy, about 5 minutes. allow to cool, then tear into bite-sized pieces.
  • in a large bowl, mix together lettuce, tomatoes, green onions, cucumber, green olives, radishes, green peppers, and toasted pita. season with mint, sumac, and salt; toss until evenly combined. pour in lemon juice and olive oil; stir to combine.
