Jen's Balsamic Salad Dressing (ww Core)

Ingredients

  • 1/4 cup balsamic vinegar
  • 1/4 cup minced green onion
  • 2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
  • 1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
  • 2 tablespoons dijon mustard
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon water
  • 1/8 teaspoon pepper
  • 3 garlic cloves, minced

Recipe

  • 1 combine all ingredients in a bowl, and stir well.

Mascarpone Dressing For Taco Salad

Egg Salad With Chutney And Almonds

Ingredients

  • 1/4 onion, minced (red is best)
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 2 tablespoons mustard (dark, spicy)
  • 1/2 cup celery, finely chopped
  • 1/3 cup major grey's chutney (or your favorite, homemade version of thick, mango and ginger chutney)
  • 1/2 cup mayonnaise
  • 14 eggs, hard-boiled and chopped
  • salt
  • pepper
  • 1/2 cup almonds, chopped (whole, salted)

Recipe

  • 1 combine onion, garlic and lemon juice and let stand 15 minutes.
  • 2 add the mustard, celery, chutney and mayonnaise and stir until well-mixed.
  • 3 gently add the eggs and season. depending on your taste, adjust the lemon and chutney.
  • 4 refrigerate (lynne suggests 12-24 hours before serving).
  • 5 when ready to serve--stir in almonds.

Catalina French Dressing

  • 1 cup sugar
  • 1 cup ketchup (heinz)
  • 1 cup oil (not olive)
  • 3/4 cup cider vinegar
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 small onion, chopped

  • 1 teaspoon celery seed

  • 1 mix and store in fridge!

Mascarpone Cheese Pound Cake

  • 1 cup butter, room temperature
  • 1/2 cup shortening
  • 3 cups granulated sugar
  • 1 (16 ounce) container mascarpone cheese or 1 (8 ounce) package cream cheese, room temperature
  • 3 cups all-purpose flour, sifted before measuring
  • 6 eggs
  • 1 tablespoon vanilla extract
  • 1 pint raspberries
  • 1 quart strawberry
  • 1 pint blueberries
  • 1 pint blackberry
  • 1 cup sugar
  • 1 cup orange liqueur
  • 1 bunch fresh mint
  • 1 lb cake
  • whipped cream, for garnish
  • fresh mint sprig, for garnish

Recipe

  • 1 in a large mixing bowl, cream butter and shortening. with electric hand-held mixer on medium speed, gradually beat in the sugar. beat in mascarpone cheese. add flour, alternating with the eggs, beginning and ending with flour. stir in vanilla. pour batter into a greased and floured 10-inch tube pan or bundt cake pan. bake at 325° for about 1 hour and 15 minutes or until a wooden pick comes out clean when inserted in the center. let cool in pan for 10 minutes, then remove to a rack to cool completely.
  • 2 for berry salad:.
  • 3 in a large bowl, add all berries and sugar.
  • 4 mash berries slightly and add orange liqueur. let sit for 30 minutes until ready to serve.
  • 5 slice pound cake and top with macerated berries and whipped cream. garnish with mint.

Legz' Linguini W/ Red Clam Sauce

  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • 2 (15 ounce) cans italian stewed tomatoes, undrained
  • 1/2 cup fresh parsley (or 1 tbs dried parsley)
  • 1/4 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/8 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 2 (16 ounce) cans minced clams, undrained
  • 2 lbs pre-cooked whole clams, partially thawed
  • 1 tablespoon lemon juice
  • 1 lb linguine
  • 0.5 (3 ounce) can tomato paste, if you want to thicken the sauce
  • parsley sprig, for garnish

Recipe

  • 1 heat butter and olive oil in large skillet over medium-high heat.
  • 2 add garlic and cook til garlic is golden (about 3 minutes).
  • 3 add parsley, oregano, basil, crushed red pepper, 1.5 cans of the stewed tomatoes and salt to pan. mix well.
  • 4 add undrained clams.
  • 5 bring to boil; simmer 5-6 minutes.
  • 6 add longneck clams to sauce. cover and simmer til shells just barely open.
  • 7 add lemon juice to sauce, simmer for another 1-2 minutes, covered.
  • 8 spoon sauce and clams over prepared linguini.
  • 9 ***serving suggestion: serve with warm loaf french garlic bread, a glorious caesar salad and a glass of good wine. :).

  • 1 lb halibut, cut into chunks

  • 1 salad: wash, dry, break into bite-sized pieces and set aside.

Grilled Gressingham Duck With Cherry Sauce

  • 1 mix lime jello with 1 cup boiling water when partially set add 1 cup drained crushed pineapple let set.

  • 3 add 1 cup boiling water to lemon jello when partially set add the whipped creme and cottage cheese let set.
  • 4 add 1 cup boiling water to cranberry jello when partially set add cranberry sauce.

  • 6 pour lemon, whipped creme, cottage cheese mixture over lime let set firmly.

  • 1 in a plactic zip-lock bag, mix together the salad dressing and mustard.
  • 2 add the chicken chunks and marinate for 2 hours.
  • 3 add the vegetables at the end of the marination and toss.

  • 5 if skewering: broil till chicken is done.
  • 6 if baking: bake at 350 degrees till chicken is cooked through (approximately 30-40 minutes).

  • 12 ounces fettuccine (try spinach or a whole grain variety)
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 (28 ounce) can diced tomatoes, with liquid
  • 1/2 cup thinly sliced oil-cured sun-dried tomato packed in oil
  • 3 -4 fresh basil leaves, thinly sliced (or 1/2 to 1 teaspoon, dried)

  • 1 cook the pasta in plenty of rapidly simmering water until al dente, then drain.
  • 2 meanwhile, heat the oil in a large saucepan. add the garlic and sauté over low heat until golden. add the diced and dried tomatoes, dried basil, and red pepper flakes. bring to a simmer, then add the asparagus and simmer over medium-low heat, covered, until the asparagus is tender-crisp, about 8 minutes.
  • 3 combine the pasta, asparagus, and sauce in a large serving bowl and toss well. season to taste with salt and pepper. serve at once, passing around the parmesan to anyone who wishes to top their pasta with it.
  • 4 to complete the meal: make a simple salad with a vinaigrette. serve with a good store-bought foccacia bread.

Fried Okra Salad

  • 1 (16 ounce) bag frozen breaded okra
  • 1/4 cup green onion, sliced thinly
  • 1/4-1/2 cup bell pepper, small chopped

Recipe

  • 1 fry okra according to package direction. cool to room temperature.
  • 2 when okra is room temperature, gently stir in green onion, bell pepper, tomatoes and bacon.
  • 3 in separate bowl, mix together sugar, vegetable oil and vinegar until well blended.
  • 4 pour dressing over okra mixture and gently toss to coat.
  • 5 chill to allow flavors to blend.
  • 6 i don't salt my recipes, but feel free to add salt, if needed to taste.

Macaroni & Cheese Salad

Ingredients

  • 1 lb elbow macaroni
  • 3/4 cup sweet onion, peeled and diced
  • 1 dozen egg, boiled, peeled, and diced
  • 2 (15 ounce) cans black olives
  • 2 cups cheddar cheese, cubed
  • 1/2 cup bacon bits (real bacon ones)
  • 1 cup mayonnaise
  • 3 tablespoons dijon mustard
  • salt and pepper

Recipe

  • 1 boil macaroni according to package directions. drain and rinse in cold water.
  • 2 dice onions, slice olives, cube cheese, and cut eggs in big chunks.
  • 3 add all onions, olives, cheese ,and eggs to macaroni one at a time.
  • 4 combine mayonnaise and dijon mustard.
  • 5 toss into macaroni salad.
  • 6 add bacon bits and season with salt and pepper to taste.
  • 7 toss well to mix.
  • 8 refrigerate to chill.

Jello Supreme

Ingredients

  • Servings: 12
  • 1 (3 ounce) box cherry jell-o (regular or sugar-free)
  • 1 (3 ounce) box lime jell-o gelatin (regular or sugar-free)
  • 1 (21 ounce) can cherry pie filling
  • 1 (16 ounce) can crushed pineapple
  • 1 (8 ounce) container cream cheese (regular or light)
  • miniature marshmallow

Recipe

  • 1 -------layer1-------------.
  • 2 dissolve the cherry jello in 1 cup of hot water.
  • 3 pour in a 9x12 pan and mix in the can of cherry pie filling.
  • 4 put in refrigerator to set.
  • 5 -------layer2------------.
  • 6 dissolve the lime jello in 1 cup of hot water.
  • 7 add in the cream cheese and mix with a mixer till the cream cheese is in small bits.
  • 8 (don't totally dissolve cheese) add in the crushed pineapple.
  • 9 this layer can stay in the bowl, but put in the fridge to cool.
  • 10 (don't leave in the bowl till set) the first layer should not take long to set.
  • 11 when set, add layer 2 and top with marshmallows (kind of pat them in).
  • 12 put back in fridge to set.
  • 13 this is considered a salad or dessert.
  • 14 great for any potluck or holiday dinner.

  • 8 ounces fettuccine pasta
  • 1/2 cup mayonnaise
  • 1/2 cup frozen corn
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon cracked black pepper

Recipe

  • 1 cook pasta according to directions.
  • 2 mix pasta and corn in a bowl.
  • 3 mix together the mayonaise, cheese, garlic powder and pepper.
  • 4 combine the pasta and sauce, mix well.
  • 5 salt to taste.
  • 6 refrigerate for at least an hour.

Mustardy Beef Tenderloin On Greens

Ingredients

  • Servings: 6
  • 3 tablespoons dijon mustard
  • 2 teaspoons olive oil
  • 2 teaspoons black peppercorns, cracked
  • 2 teaspoons fresh tarragon or 1/2 teaspoon dried tarragon
  • 1 teaspoon kosher salt
  • 1 (2 -3 lb) beef tenderloin
  • 1/4 cup balsamic vinegar
  • 8 cups mixed baby greens
  • 1/4 cup fresh tarragon leaves

Recipe

  • 1 in small bowl stir together 1 tablespoons of the mustard, the olive oil, peppercorns, the 2 teaspoons fresh tarragon and the salt.
  • 2 spread mixture over the top and sides of the meat. let stand for 15 minutes at room temperature or refrigerate up to 4 hours.
  • 3 preheat oven to 425 degrees and place meat on a rack of a shallow roasting pan.
  • 4 roast, uncovered, for 30-45 minutes or until meat thermometer registers 140 degrees for medium-rare.
  • 5 remove meat from pan; cover with foil and let stand 15 minutes before slicing.
  • 6 while meat is standing, place roasting pan over low heat on the stove.
  • 7 add vinegar to the pan. cook, scraping up the browned bits from the bottom of the pan. stir in remaining 2 tablespoons of mustard and juices that have accumulated from standing roast.
  • 8 if mixture seems thick, use water to thin to drizzling consistency.
  • 9 toss together greens and remaining tarragon leaves. line a platter with greens mixture.
  • 10 drizzle greens with 3/4 the pan juices. slice the meat; overlap the slices and now drizzle with the remaining pan juices.

  • 1/2 teaspoon dry mustard

  • 1 preheat the oven to gas mark 4 (350f).
  • 2 add pasta to a saucepan of boiling water and allow simmer for about 9 minutes.
  • 3 while the pasta is cooking, chop the red onion and peppers into small pieces and then fry in a little olive oil in a large saucepan.
  • 4 after about 5 minutes, add the red pepper sauce and heat through for another 5 minutes.

  • 1 lime
  • pepper
  • watercress
  • 6 cardamom pods
  • 2 tablespoons cumin
  • 2 tablespoons coriander
  • 4 cloves
  • 1 teaspoon pepper
  • 1 teaspoon fenugreek seeds
  • 2 teaspoons turmeric
  • 1 tablespoon paprika
  • 1 teaspoon chili
  • 1/4 teaspoon cinnamon
  • 1 teaspoon salt
  • 4 garlic cloves
  • 40 g ginger
  • 100 g yoghurt
  • 200 g yoghurt
  • 1 teaspoon mint sauce

Recipe

  • 1 to make the marinade, split the cardamom pods and remove the seeds. put the cardamom seeds in a dry non-stick frying pan and discard the husks. add the cumin and coriander seeds, cloves and black peppercorns and place the pan over a medium heat. cook for 1-2 minutes, stirring regularly until the spices are lightly toasted - you know they're ready when you can smell the spicy aroma.
  • 2 tip the toasted spices into a pestle and mortar, or an electric spice grinder, and pound to a fine powder. transfer to a mixing bowl and stir in the fenugreek, turmeric, paprika, chilli powder, cinnamon and salt. add the garlic, ginger and yoghurt, then mix well and leave to stand while you prepare the chicken.
  • 3 place the chicken on its breast on a sturdy chopping board and cut carefully either side of the backbone with good scissors or poultry shears. chuck out the bone and cut off the foot joints and wing tips.
  • 4 strip all the skin off the bird apart from the ends of the wings (which are easier to remove after cooking). you'll find this simpler to do if you snip the membrane between the skin and the chicken flesh as you go. cut off and discard any obvious fat - it will be a creamy colour. open out the chicken and place it on the board so the breast side is facing upwards.
  • 5 press down heavily with the palms of your hands to break the breastbone and flatten the chicken as evenly as possible. this will help it cook more quickly. slash the meat with a knife through the thickest parts of the legs and breasts. place the chicken in a shallow non-metallic dish - a lasagne dish is ideal - and tuck in the legs and wings.
  • 6 spoon over the marinade and really massage it into the chicken on both sides, ensuring that every bit of the bird is well coated - get your hands in there and really go for it. cover the dish with cling film and put the chicken in the fridge to marinate for at least 4 hours or ideally overnight.
  • 7 preheat the oven to 210c/fan 190c/gas 6 1/2. take the chicken out of the dish and place it on a rack inside a large baking tray, breast-side up. squeeze over some juice from the lime and season with ground black pepper.
  • 8 roast for 45-50 minutes until the chicken is lightly browned and cooked throughout, tossing the lime quarters on to the rack for the last 20 minutes to cook alongside the chicken. they'll be good for squeezing over the meat later. the juices should run clear when the thickest part of one of the thighs is pierced with a skewer. cover loosely with foil and leave to rest for 10 minutes before carving.
  • 9 while the chicken is resting, make the sauce. spoon the yoghurt into a serving bowl and stir in the mint sauce until thoroughly combined. transfer the chicken to a plate or wooden board and carve into slices, discarding any skin. serve with the sauce and some watercress or salad and enjoy!

  • 3 place two tomato slices and a few slices of lettuce in each shell.
  • 4 stir the diced chicken through the sauce and stuff each shell with equal amounts.

  • 2 -3 ripe tomatoes
  • 1 large red onion

  • 1 garlic clove, crushed
  • 1 tablespoon lemon juice
  • 1/2 cup crumbled soft cheese (or more, feta, cheddar, bleu, camembert, brie, goat cheese, etc.)
  • 2 -3 tablespoons chopped fresh basil or 2 -3 tablespoons cilantro
  • 1/2 teaspoon salt

Recipe

  • 1 husk the corn and remove and discard the silk. rinse with cold water and set aside. bring a large pan of water to a rolling ball. drop in the corn and cook for 2 minutes. remove the pan from the heat and allow the corn to stand in the water for 5 minutes. alternative cooking method: wrap corn in wax paper (not plastic wrap) and microwave for 2 minutes.
  • 2 drain the corn and flood with cold water. pat the corn dry with toweling. using a sharp knives, cut the kernels from the corn, place into a bowl and set aside.
  • 3 cut the tomatoes crosswise into 1/8-inch thick slices and thinly slice the onion.
  • 4 arrange the lettuce leaves on a large platter and place the tomatoes and onions on top in an overlapping pattern. ladle the corn in the center of the platter. chill the platter of vegetables for about an hour.
  • 5 meanwhile, make the salad dressing. in a small bowl combine the oil, vinegar, garlic and lemon juice. stir in the cheese, chopped basil or cilantro, salt and black pepper and beat briskly with a fork or whisk until creamy and well-blended. just before serving, drizzle the salad dressing over the corn and tomatoes and serve immediately.

  • 4 mix raspberry gelatin with remaining boiling water (1 1/2 cups). add thawed raspberries. chill until partially set. then pour over sour cream layer and chill until firm.

  • salt
  • 20 water chestnuts, fresh if possible

Recipe

  • 1 fill a roasting dish with 5cm warm water and place haloumi slices in it in a single layer. leave at room temperature for 2 - 6 hours, or over night in the fridge.
  • 2 thinly slice the chilli and place in a small pan with the garlic and half the oil. bring to a gentle simmer for 2 minutes. (you don't want the garlic to change colour too much, you just want the flavours to infuse). take off the heat and pour contents into a small jug, then add the reamining oil and the vinegar and leave this dressing to one side.
  • 3 bring a small pot of water to the boil and add half the spinach and submerge with a wooden spoon. keep the spinach in the water for 15 seconds then drain immediately into a strainer and refresh with cold water. squeeze out excess water. shred the remaining spinach with a shap knife.
  • 4 take the haloumi from the soaking water and pat dry on kitchen paper. heat a frying pan and add a few tablespoons of olive oil, then fry the haloumi on both sdies. remove from the heat and place on 4 plates.
  • 5 take the blanched spinach and pull apart to loosen it a little, then place in a bowl with the shredded raw spinach, orange sements, hazelnuts and sun dried tomatoes.
  • 6 slice the water chestnuts into rounds about 5mm thick and add to the bowl.
  • 7 stir the chilli dressing and add to the salad mix with a little salt and mix by hand.
  • 8 divide the salad between the four ptaes and serve.
