Alternative Tabbouleh (tabouli)
Ingredients

-  1 cup water 
-  1/4 cup lemon juice 
-  2 tablespoons olive oil 
-  2 tablespoons chopped fresh mint, or more to taste 
-  1 teaspoon salt, or more to taste 
-  black pepper to taste 
-  1 cup bulgur wheat 
-  1 large tomato, diced 
-  1 cucumber, diced 
-  1/2 red onion, diced 
-  1 cup finely chopped broccoli florets 
-  1/2 cup dried cranberries

Ready Time: 3 hrs 20 mins
- stir water, lemon juice, olive oil, mint, salt, and pepper together in a large container with a lid; add bulgur wheat, stir to coat, and soak in refrigerator until bulgur is soft, 3 hours to overnight.
