Alternative Tabbouleh (tabouli)

Ingredients

  • Servings: 8
  • 1 cup water
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh mint, or more to taste
  • 1 teaspoon salt, or more to taste
  • black pepper to taste
  • 1 cup bulgur wheat
  • 1 large tomato, diced
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 cup finely chopped broccoli florets
  • 1/2 cup dried cranberries

Recipe

    Preparation Time: 20 mins Ready Time: 3 hrs 20 mins

  • stir water, lemon juice, olive oil, mint, salt, and pepper together in a large container with a lid; add bulgur wheat, stir to coat, and soak in refrigerator until bulgur is soft, 3 hours to overnight.
  • mix tomato, cucumber, red onion, broccoli, and dried cranberries together in a large bowl; add bulgur wheat mixture and stir to coat.
