Non-traditional Tabbouleh Salad With Pineapple And Pomegranate Seeds

Ingredients

  • Servings: 8
  • 3 cups chopped flat-leaf parsley
  • 2 cups finely chopped small cucumber
  • 2 cups finely chopped pineapple
  • 2 cups pomegranate seeds
  • 1/2 cup minced onion
  • 1/4 cup minced fresh mint leaves
  • 2/3 cup olive oil
  • 1/2 cup fresh lemon juice, or to taste
  • salt and ground black pepper to taste

Recipe

    Preparation Time: 20 mins Ready Time: 35 mins

  • mix parsley, cucumber, pineapple, pomegranate seeds, onion, and mint in a large bowl. drizzle olive oil and lemon juice over the salad and toss to coat; season with salt and pepper.
  • refrigerate salad until chilled, at least 15 minutes.
