Dijon Mustard Dressing

Ingredients
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons sugar
- 1 teaspoon black pepper
- 1/4 teaspoon dried tarragon
- 1 tablespoon parsley, chopped
- 1 tablespoon dijon mustard
- 1 garlic clove, minced
- 1/2 cup olive oil
- 1/4 cup wine vinegar
- 5 tablespoons heavy cream
- 2 eggs, beaten
Recipe
- 1 in a 1 quart measure, whisk together salt, sugar, pepper, tarragon, parsley, mustard, garlic, oil, vinegar, and cream.
- 2 microwave on high for 1 1/2 to 2 minutes.
- 3 beat 2 to 3 tablespoons of hot oil mixture into beaten eggs, beating constantly.
- 4 microwave at 50% power for 2 minutes, until thickened, stirring once, during cooking.
- 5 chill dressing.
