Lentil Salad With Smoked Sausage

Total Time: 12 hrs 20 mins Preparation Time: 12 hrs Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2/3 cup dried lentils, uncooked
  • 1 teaspoon salt
  • 1/2 lb smoked sausage, cooked and diced, about 1 1/2 cups, i use hillshire hot links
  • 3 tablespoons dijon mustard
  • 3 teaspoons cider vinegar
  • 3 tablespoons olive oil
  • 2 stalks green onions, sliced
  • salt and pepper

Recipe

  • 1 the night before you want to make the salad, cover the lentils with 3 cups cold water.
  • 2 drain and rinse the lentils under cold running water.
  • 3 put lentils in a small saucepan.
  • 4 cover with cold water.
  • 5 add 1 teaspoons of salt.
  • 6 bring to boil over medium heat.
  • 7 lower heat and simmer until lentils are tender, about 20 minutes.
  • 8 drain well.
  • 9 cool in large bowl.
  • 10 combine green onions, lentils, and smoked sausage.
  • 11 in a separate bowl mix together mustard, vinegar and oil.
  • 12 add to lentil mixture.
  • 13 season to taste with salt and pepper.
  • 14 toss well.
  • 15 refrigerate for a least one hour.
  • 16 serve at room temperature.
  • 17 will keep up to 3 days in refrigerator.
