Lentil Salad With Smoked Sausage

Ingredients
- Servings: 4
- 2/3 cup dried lentils, uncooked
- 1 teaspoon salt
- 1/2 lb smoked sausage, cooked and diced, about 1 1/2 cups, i use hillshire hot links
- 3 tablespoons dijon mustard
- 3 teaspoons cider vinegar
- 3 tablespoons olive oil
- 2 stalks green onions, sliced
- salt and pepper
Recipe
- 1 the night before you want to make the salad, cover the lentils with 3 cups cold water.
- 2 drain and rinse the lentils under cold running water.
- 3 put lentils in a small saucepan.
- 4 cover with cold water.
- 5 add 1 teaspoons of salt.
- 6 bring to boil over medium heat.
- 7 lower heat and simmer until lentils are tender, about 20 minutes.
- 8 drain well.
- 9 cool in large bowl.
- 10 combine green onions, lentils, and smoked sausage.
- 11 in a separate bowl mix together mustard, vinegar and oil.
- 12 add to lentil mixture.
- 13 season to taste with salt and pepper.
- 14 toss well.
- 15 refrigerate for a least one hour.
- 16 serve at room temperature.
- 17 will keep up to 3 days in refrigerator.
