Fresh Corn Salad

Ingredients

- 5 ears corn, husks and silk removed
- 2 limes, juice of
- 1 (8 ounce) package cherry tomatoes, halved
- 1/2 cup extra virgin olive oil
- 1 (4 ounce) package feta cheese, crumbled
- 2 tablespoons red onions, minced
- 2 teaspoons cumin
- 3 tablespoons cilantro, finely minced
- 1 tablespoon chili powder
Recipe
- 1 in a large bowl, combine chili powder, cumin and lime juice.
- 2 slowly add olive oil and combine thoroughly.
- 3 with sharp knife, remove corn kernels from cob and set cob aside.
- 4 add kernels, onion, tomatoes, and feta cheese to mixture.
- 5 "milk" the cob by rubbing the blunt edge of a knife or spoon on the stripped cob and add to mixture.
- 6 toss mixture well.
- 7 garnish with fresh cilantro and season with salt and pepper, if desired.
