Fresh Corn Salad

Ingredients

  • Servings: 4
  • 5 ears corn, husks and silk removed
  • 2 limes, juice of
  • 1 (8 ounce) package cherry tomatoes, halved
  • 1/2 cup extra virgin olive oil
  • 1 (4 ounce) package feta cheese, crumbled
  • 2 tablespoons red onions, minced
  • 2 teaspoons cumin
  • 3 tablespoons cilantro, finely minced
  • 1 tablespoon chili powder

Recipe

  • 1 in a large bowl, combine chili powder, cumin and lime juice.
  • 2 slowly add olive oil and combine thoroughly.
  • 3 with sharp knife, remove corn kernels from cob and set cob aside.
  • 4 add kernels, onion, tomatoes, and feta cheese to mixture.
  • 5 "milk" the cob by rubbing the blunt edge of a knife or spoon on the stripped cob and add to mixture.
  • 6 toss mixture well.
  • 7 garnish with fresh cilantro and season with salt and pepper, if desired.
