Jello With Cucumbers And Cottage Cheese

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 (3 ounce) package lemon jell-o gelatin
  • 1 cup water, boiling
  • 1 teaspoon onion, finely grated
  • 1 -2 tablespoon lemon juice
  • 1 cup cream-style cottage cheese, small curd (drained)
  • 1 cup cucumber, finely chopped (i used 1/2 pf an unpeeled english cucumber ~ the one that comes wrapped in plastic wrap)

Recipe

  • 1 in a medium or large bowl, dissolve jello in boiling water. add onion and lemon juice. chill until partially set, 20 to 30 minutes.
  • 2 beat at high speed until light and fluffy. fold in cottage cheese and cucumbers.
  • 3 pour into mold or 8-inch square pyrex baking pan. chill 4 hours or overnight.
