Edamame And Corn Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 1/2 cups edamame
  • 2 teaspoons dried oregano
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 1 red bell pepper, coarsely chopped
  • 2 cups corn kernels
  • 1/2 cup chopped green onion
  • 1/2 cup chopped parsley

Recipe

  • 1 in medium saucepan, cook edamame. drain and rinse in cold water.
  • 2 in small bowl, whisk together oregano, salt, pepper, oil and vinegar.
  • 3 in large bowl combine vegetables. toss with dressing to combine. cover and refrigerate at least 1 hour before serving. toss with parsley just before serving.
