Lemony Red Potato Salad

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 2 lbs red potatoes
  • 3 tablespoons lemon juice
  • 2 teaspoons grated lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup olive oil
  • 3/4 cup scallions (about 4) or 3/4 cup green onion, chopped (about 4)

Recipe

  • 1 in pot combine potatoes with enough cold water to cover by 1", over med.-high heat, bring to a boil. reduce heat to med and simmer uncovered until potatoes are tender about 20-25 minutes.
  • 2 drain and cool enough to handle.
  • 3 meanwhile in small bowl, combine lemon juice, zest, salt and pepper until salt disolves.
  • 4 slowly whisk in oil until mixture thickens slightly.
  • 5 cut potatoes in half and place in serving bowl.
  • 6 add scallions and dressing and toss to coat.
  • 7 chill overnight for maximum flavor and bring to room temperature to serve. great warm or cold.
