Lemony Red Potato Salad

Ingredients

- 2 lbs red potatoes
- 3 tablespoons lemon juice
- 2 teaspoons grated lemon zest
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup olive oil
- 3/4 cup scallions (about 4) or 3/4 cup green onion, chopped (about 4)
Recipe
- 1 in pot combine potatoes with enough cold water to cover by 1", over med.-high heat, bring to a boil. reduce heat to med and simmer uncovered until potatoes are tender about 20-25 minutes.
- 2 drain and cool enough to handle.
- 3 meanwhile in small bowl, combine lemon juice, zest, salt and pepper until salt disolves.
- 4 slowly whisk in oil until mixture thickens slightly.
- 5 cut potatoes in half and place in serving bowl.
- 6 add scallions and dressing and toss to coat.
- 7 chill overnight for maximum flavor and bring to room temperature to serve. great warm or cold.
