Marinated Mushrooms

Ingredients
- 1/3 cup red wine vinegar
- 1/3 cup salad oil
- 1 red onion, thinly sliced
- 1 teaspoon salt
- 2 teaspoons dried parsley flakes
- 1 tablespoon brown sugar
- 1 teaspoon prepared mustard
- 3 cups fresh mushrooms, steamed 1 minute
Recipe
- 1 simmer all ingredients except mushrooms for 5 minutes.
- 2 cool slightly.
- 3 steam mushrooms for 1 minute and drain.
- 4 add marinade to mushrooms and toss lightly.
- 5 store in refrigerator for at least 24 hours, or up to a week.
- 6 remove from refrigerator an hour before serving.
