Marinated Tomatoes, Onions & Mushrooms

Ingredients

  • Servings: 8
  • 5 large tomatoes, cut into wedges
  • 1 medium red onion, sliced thin
  • 1 1/2 cups fresh mushrooms, sliced thin
  • 1 1/2 tablespoons dried parsley, crushed
  • 1 tablespoon sugar
  • 1 1/2 teaspoons garlic salt
  • 1 1/2 teaspoons lawry's seasoned salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 3/4 cup vegetable oil
  • 1/2 cup red wine vinegar

Recipe

  • 1 cut/slice vegetables and set aside in a large ziploc bag.
  • 2 combine all other ingredients in a bowl and whisk vigorously.
  • 3 poor the marinade over the vegetables in the bag. zip tight.
  • 4 marinate as little as 3 hours, or as long as overnight.
  • 5 turn the bag occasionally.
