Marinated Tomatoes, Onions & Mushrooms

Ingredients

- 5 large tomatoes, cut into wedges
- 1 medium red onion, sliced thin
- 1 1/2 cups fresh mushrooms, sliced thin
- 1 1/2 tablespoons dried parsley, crushed
- 1 tablespoon sugar
- 1 1/2 teaspoons garlic salt
- 1 1/2 teaspoons lawry's seasoned salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 3/4 cup vegetable oil
- 1/2 cup red wine vinegar
Recipe
- 1 cut/slice vegetables and set aside in a large ziploc bag.
- 2 combine all other ingredients in a bowl and whisk vigorously.
- 3 poor the marinade over the vegetables in the bag. zip tight.
- 4 marinate as little as 3 hours, or as long as overnight.
- 5 turn the bag occasionally.
