Neville's Favourite

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 2
  • 3 vegetarian sausages
  • 3 cooked med sweet potatoes (do not peel)
  • 1 cup finely chopped spinach
  • 4 medium carrots
  • 15 g basil
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 tablespoons soy sauce
  • oil (for cooking)

Recipe

  • 1 grate carrots (place 2 t grated carrot aside for garnish).
  • 2 chop basil roughly (for garnish).
  • 3 fry sausages in oil until almost cooked (med heat).
  • 4 slice sweet potato (without removing peels).
  • 5 add sweet potatoes to sausages.
  • 6 slice sausages when cooked through.
  • 7 add soy sauce.
  • 8 add cayenne pepper.
  • 9 stir occasionally to prevent sticking or burning.
  • 10 cook until potatoes are slightly browned.
  • 11 stir in carrot and spinach.
  • 12 remove from heat as soon as ingredients are mixed.
  • 13 serve immediately.
  • 14 garnish with a sprinkling of basil and grated carrot.
  • 15 serve with a salad.
