Grilled Watermelon Salad With Fig Dressing And Feta

Ingredients
- 1/2 a 5 lb. seedless watermelon
- 2 large ripe tomatoes, diced
- radish sprouts (or alfalfa if unavailable)
- 6 -8 dried figs
- 1/2 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1 cup feta cheese
- black pepper
Recipe
- 1 for the fig dressing soak the figs in a small amount of boiling water to soften.
- 2 place figs into a food processor with desired amount of balsamic vinegar (you can taste it as you go) and blend until smooth - i used a bit of the soaking water, too.
- 3 place into a storage container until use.
- 4 grill both sides of 1" thick rounds of watermelon (do not remove rind until after it has been grilled) on a medium to hot oiled barbecue just until charred.
- 5 cool and refrigerate - i found several hours to be best.
- 6 cut watermelon (remove rind) and tomatoes into bite sized pieces as desired.
- 7 plate up or keep as one big salad as you wish.
- 8 put radish sprouts on top.
- 9 dress with the fig-balsamic vinegar mixture then with olive oil.
- 10 garnish with feta cheese and freshly cracked black pepper.
