Grilled Watermelon Salad With Fig Dressing And Feta

Ingredients

  • 1/2 a 5 lb. seedless watermelon
  • 2 large ripe tomatoes, diced
  • radish sprouts (or alfalfa if unavailable)
  • 6 -8 dried figs
  • 1/2 cup balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 cup feta cheese
  • black pepper

Recipe

  • 1 for the fig dressing soak the figs in a small amount of boiling water to soften.
  • 2 place figs into a food processor with desired amount of balsamic vinegar (you can taste it as you go) and blend until smooth - i used a bit of the soaking water, too.
  • 3 place into a storage container until use.
  • 4 grill both sides of 1" thick rounds of watermelon (do not remove rind until after it has been grilled) on a medium to hot oiled barbecue just until charred.
  • 5 cool and refrigerate - i found several hours to be best.
  • 6 cut watermelon (remove rind) and tomatoes into bite sized pieces as desired.
  • 7 plate up or keep as one big salad as you wish.
  • 8 put radish sprouts on top.
  • 9 dress with the fig-balsamic vinegar mixture then with olive oil.
  • 10 garnish with feta cheese and freshly cracked black pepper.
