Low-fat Cool Cauliflower Salad

Ingredients

- 1 large head cauliflower, trimmed and chopped
- 1 red onion, chopped
- 1 green bell pepper, seeded and chopped
- 4 scallions, minced
- 3 tablespoons fresh chives, chopped
- 2 cups basmati rice, cooked
- 1/2 cup bottled vinaigrette dressing
Recipe
- 1 place cauliflower in a steamer basket over boiling water.
- 2 cover pan and steam about 3 minutes, until almost tender.
- 3 chill .
- 4 combine onion, bell pepper, scallions, chives, and cooked basmati rice in a bowl.
- 5 add chilled cauliflower.
- 6 drizzle with dressing and serve chilled.
