Low-fat Cool Cauliflower Salad

Total Time: 28 mins Preparation Time: 25 mins Cook Time: 3 mins

Ingredients

  • Servings: 4
  • 1 large head cauliflower, trimmed and chopped
  • 1 red onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 4 scallions, minced
  • 3 tablespoons fresh chives, chopped
  • 2 cups basmati rice, cooked
  • 1/2 cup bottled vinaigrette dressing

Recipe

  • 1 place cauliflower in a steamer basket over boiling water.
  • 2 cover pan and steam about 3 minutes, until almost tender.
  • 3 chill .
  • 4 combine onion, bell pepper, scallions, chives, and cooked basmati rice in a bowl.
  • 5 add chilled cauliflower.
  • 6 drizzle with dressing and serve chilled.
