Fried Okra Salad

Ingredients

  • Servings: 6
  • 1 1/2 cups self rising flour
  • 1 teaspoon salt
  • 1 lb fried okra
  • 1 1/2 cups buttermilk
  • oil
  • 1 head bibb lettuce
  • 1 cup chopped tomato
  • 1 medium sweet onion, sliced
  • 1 medium bell pepper, chopped
  • lemon, dressing
  • 1 slice crumbled bacon

Recipe

  • 1 combine corn meal and salt. dip okra in buttermilk and dredge in cornmeal. heat 2 inches of oil in a dutch oven heated to 375 degrees. fry okra in batches until golden brown. drain on paper towels. arrange lettuce leaves, tomato slices, onion,and bell pepper on a plater. add lemon dressing, stirring to coat. top with bacon and okra.
