Fried Okra Salad

Ingredients

- 1 1/2 cups self rising flour
- 1 teaspoon salt
- 1 lb fried okra
- 1 1/2 cups buttermilk
- oil
- 1 head bibb lettuce
- 1 cup chopped tomato
- 1 medium sweet onion, sliced
- 1 medium bell pepper, chopped
- lemon, dressing
- 1 slice crumbled bacon
Recipe
- 1 combine corn meal and salt. dip okra in buttermilk and dredge in cornmeal. heat 2 inches of oil in a dutch oven heated to 375 degrees. fry okra in batches until golden brown. drain on paper towels. arrange lettuce leaves, tomato slices, onion,and bell pepper on a plater. add lemon dressing, stirring to coat. top with bacon and okra.
