Lentil Pear And Goat Cheese Salad

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups lentils
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1/2 teaspoon ground ginger
  • 2 pears, cut into 1/2 inch chunks
  • 1 bunch watercress
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons coarsely chopped pecans

Recipe

  • 1 in a medium saucepan of boiling water, cook the lentils with 1/4 teaspoon each of salt and pepper for 20-25 minutes, or until tender. drain if needed.
  • 2 meanwhile, in a medium bowl, whisk together the lime juice, honey, ginger and remaining salt and pepper.
  • 3 add the lentils and cool to room temperature.
  • 4 add the pears and watercress, tossing to combine.
  • 5 serve the salad sprinkled with goat cheese and pecans.
