Lentil Pear And Goat Cheese Salad

Ingredients

- 1 1/2 cups lentils
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup lime juice
- 2 tablespoons honey
- 1/2 teaspoon ground ginger
- 2 pears, cut into 1/2 inch chunks
- 1 bunch watercress
- 4 ounces goat cheese, crumbled
- 2 tablespoons coarsely chopped pecans
Recipe
- 1 in a medium saucepan of boiling water, cook the lentils with 1/4 teaspoon each of salt and pepper for 20-25 minutes, or until tender. drain if needed.
- 2 meanwhile, in a medium bowl, whisk together the lime juice, honey, ginger and remaining salt and pepper.
- 3 add the lentils and cool to room temperature.
- 4 add the pears and watercress, tossing to combine.
- 5 serve the salad sprinkled with goat cheese and pecans.
