Lentil Salad

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup lentils
  • 1 cup rice
  • 1 large onion
  • 1 bunch parsley
  • 2 tomatoes
  • 1 bell pepper
  • 1 large carrot
  • 1 tablespoon dried mint
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon salt

Recipe

  • 1 fry chopped onions in the olive oil until golden brown.
  • 2 add lentils and rice with 2 cups water. let cook for about 20 minutes until lentils and rice are tender.
  • 3 in a separate mixing bowl, chop and combine parsley, tomatoes, bell pepper, carrot and mint. when lentil and rice mixture has cooled mix in all ingredients. toss with lemon juice and salt.
