Marinated Tuna And Radicchio Salad

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 (3 ounce) cans tuna in olive oil
  • 1 small bay leaf
  • 1 whole clove
  • 4 cups torn leaf lettuce
  • 3 cups shredded radicchio
  • 2 tomatoes, cut in wedges
  • 2 tablespoons toasted pine nuts
  • 1 tablespoon chopped fresh parsley

Recipe

  • 1 combine olive oil, lemon juice, sugar, salt and pepper. stir in tuna with its oil, bay leaf and clove. cover and refrigerate for at least 1 hour. remove and discard bay leaf and clove.
  • 2 in large serving bowl, toss lettuce and radicchio. place tuna mixture in center of bowl, on top of the lettuces.
  • 3 surround with tomatoes and sprinkle with salt and pepper to taste. scatter pine nuts and parsley over top.
