Marinated Tuna And Radicchio Salad

Ingredients

- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 (3 ounce) cans tuna in olive oil
- 1 small bay leaf
- 1 whole clove
- 4 cups torn leaf lettuce
- 3 cups shredded radicchio
- 2 tomatoes, cut in wedges
- 2 tablespoons toasted pine nuts
- 1 tablespoon chopped fresh parsley
Recipe
- 1 combine olive oil, lemon juice, sugar, salt and pepper. stir in tuna with its oil, bay leaf and clove. cover and refrigerate for at least 1 hour. remove and discard bay leaf and clove.
- 2 in large serving bowl, toss lettuce and radicchio. place tuna mixture in center of bowl, on top of the lettuces.
- 3 surround with tomatoes and sprinkle with salt and pepper to taste. scatter pine nuts and parsley over top.
