Garlic-basil Vinegar

Ingredients

  • 1/2 cup fresh basil leaf
  • 1 garlic clove, crushed
  • 2 cups vinegar (5% acidity)
  • fresh basil sprig
  • garlic clove, whole

Recipe

  • 1 slightly bruise basil, and place in a wide mouth glass jar with garlic.
  • 2 place vinegar in medium saucepan, bring to a boil. pour vinegar over basil and garlic;cover with lid. let stand at room temp 2 weeks.
  • 3 strain vinegar into decorative jars or bottles, discarding basil and garlic residue;add additional sprigs of basil, and whole garlic cloves if desired. seal with a cork or other airtight lid.
