Mandarin Chicken Salad

Ingredients

  • Servings: 4
  • 1/2 cup ranch salad dressing
  • 1/4 cup orange marmalade
  • 1 1/4 lbs chicken breasts, boneless skinless (cooked and sliced- about 3 cups)
  • 1/4 small red onion, thinly sliced
  • 1 (12 ounce) package mixed salad greens (about 4 cups)
  • 1 (11 ounce) can mandarin oranges, drained
  • 1/2 cup seasoned croutons
  • salt, to taste
  • black pepper, to taste

Recipe

  • 1 in large bowl blend dressing and marmalade.
  • 2 add chicken, red onion and salad greens, toss to coat, add salt and black pepper if desired.
  • 3 gently fold in oranges and croutons.
  • 4 serve.
