Mandarin Chicken Salad

Ingredients
- Servings: 4
- 1/2 cup ranch salad dressing
- 1/4 cup orange marmalade
- 1 1/4 lbs chicken breasts, boneless skinless (cooked and sliced- about 3 cups)
- 1/4 small red onion, thinly sliced
- 1 (12 ounce) package mixed salad greens (about 4 cups)
- 1 (11 ounce) can mandarin oranges, drained
- 1/2 cup seasoned croutons
- salt, to taste
- black pepper, to taste
Recipe
- 1 in large bowl blend dressing and marmalade.
- 2 add chicken, red onion and salad greens, toss to coat, add salt and black pepper if desired.
- 3 gently fold in oranges and croutons.
- 4 serve.
