Mandarin Almond Salad

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 head romaine lettuce, chopped,washed,and dried
  • 2 (11 ounce) cans mandarin oranges, drained
  • 6 long stem green onions, finely chopped
  • 1/2 cup sliced almonds
  • 2 tablespoons sugar
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tablespoon sugar
  • 1/8 teaspoon red pepper flakes
  • fresh ground black pepper

Recipe

  • 1 in a large bowl, combine the romaine, drained oranges, and chopped onions.
  • 2 heat sugar and almonds in a pan over medium heat until sugar melts and coats almonds; stir and heat until almonds are slightly brown.
  • 3 turn onto plate and cool for 10 minutes.
  • 4 combine remaining ingredients in a jar with a tight fitting lid; shake vigorously.
  • 5 pour salad dressing over lettuce mixture; toss.
  • 6 sprinkle with sugared almonds.
