Mandarin Salad

Ingredients

  • Servings: 4
  • 1 head boston lettuce
  • 1 small cucumber
  • 2 small tomatoes
  • 1 green pepper
  • 1/2 avocado
  • 5 radishes
  • 1 peach
  • 1 slice canned pineapple
  • 1 mandarin orange
  • 1/4 lb fresh strawberries
  • 1 clove garlic
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • fresh ground pepper
  • 1/4 cup orange juice
  • 2 tablespoons vegetable oil

Recipe

  • 1 wash lettuce and tear into small pieces.
  • 2 cut cucumber& tomatoes in slices.
  • 3 core, seed and slice green pepper.
  • 4 peel& slice avocado.
  • 5 slice radishes.
  • 6 peel peach& cut into wedges.
  • 7 cube pineapple slice.
  • 8 hull& cut strawberries in half.
  • 9 arrange all ingredients in a large bowl.
  • 10 just before serving, dress with orange vinaigrette.
  • 11 for the dressing: in blender, chop garlic and parsley.
  • 12 add vinegar, sugar, salt& pepper.
  • 13 process to mix.
  • 14 with motor running, gradually add orange juice and oil.
  • 15 makes about 1/2 cup.
