Mandarin Salad

Ingredients

- 1 head boston lettuce
- 1 small cucumber
- 2 small tomatoes
- 1 green pepper
- 1/2 avocado
- 5 radishes
- 1 peach
- 1 slice canned pineapple
- 1 mandarin orange
- 1/4 lb fresh strawberries
- 1 clove garlic
- 2 tablespoons chopped fresh parsley
- 2 tablespoons vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- fresh ground pepper
- 1/4 cup orange juice
- 2 tablespoons vegetable oil
Recipe
- 1 wash lettuce and tear into small pieces.
- 2 cut cucumber& tomatoes in slices.
- 3 core, seed and slice green pepper.
- 4 peel& slice avocado.
- 5 slice radishes.
- 6 peel peach& cut into wedges.
- 7 cube pineapple slice.
- 8 hull& cut strawberries in half.
- 9 arrange all ingredients in a large bowl.
- 10 just before serving, dress with orange vinaigrette.
- 11 for the dressing: in blender, chop garlic and parsley.
- 12 add vinegar, sugar, salt& pepper.
- 13 process to mix.
- 14 with motor running, gradually add orange juice and oil.
- 15 makes about 1/2 cup.
