Fruit And Spinach Salad

Ingredients

  • Servings: 4
  • 1 lb fresh spinach
  • 4 heads belgian endive
  • 4 small kiwi fruits
  • 1 small cantaloupe
  • 1 tablespoon olive oil
  • 1 large red onion, thinly sliced
  • 3/4 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 1/2 cup orange juice
  • 2 tablespoons wine vinegar
  • 1/4 lb feta cheese
  • 2 ounces swiss cheese

Recipe

  • 1 wash and drain spinach.
  • 2 cut each endive lengthwise into quarters.
  • 3 with knife or peeler, peel kiwis and cut into 1/2 inch thick slices.
  • 4 remove rind from cantaloupe and cut into large chunks.
  • 5 arrange spinach, endive, kiwis, and cantaloupe in 4 large individual salad bowls.
  • 6 in 2-quart saucepan over medium-high heat, in hot olive oil cook onion, salt, pepper until onion is golden and tender, stirring occasionally.
  • 7 remove saucepan from heat and stir in orange juice and wine vinegar.
  • 8 crumble feta cheese, cut swiss cheese into 1/2 inch pieces.
  • 9 to serve: spoon warm orange dressing over spinach salad in bowls.
  • 10 sprinkle with feta and swiss cheeses.
