Fruit And Spinach Salad

Ingredients

- 1 lb fresh spinach
- 4 heads belgian endive
- 4 small kiwi fruits
- 1 small cantaloupe
- 1 tablespoon olive oil
- 1 large red onion, thinly sliced
- 3/4 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 1/2 cup orange juice
- 2 tablespoons wine vinegar
- 1/4 lb feta cheese
- 2 ounces swiss cheese
Recipe
- 1 wash and drain spinach.
- 2 cut each endive lengthwise into quarters.
- 3 with knife or peeler, peel kiwis and cut into 1/2 inch thick slices.
- 4 remove rind from cantaloupe and cut into large chunks.
- 5 arrange spinach, endive, kiwis, and cantaloupe in 4 large individual salad bowls.
- 6 in 2-quart saucepan over medium-high heat, in hot olive oil cook onion, salt, pepper until onion is golden and tender, stirring occasionally.
- 7 remove saucepan from heat and stir in orange juice and wine vinegar.
- 8 crumble feta cheese, cut swiss cheese into 1/2 inch pieces.
- 9 to serve: spoon warm orange dressing over spinach salad in bowls.
- 10 sprinkle with feta and swiss cheeses.
