Ingredients
- 1 cup crumbled feta
- 1/2 cup heavy cream
- 1/2 cup grated english cucumber
- 1/2 cup finely chopped ripe tomato
- 1 tablespoon grated red onion
- 1 tablespoon minced kalamata olive
Recipe
- 1 in a bowl, mash feta and cream together until smooth.
- 2 fold in cucumber, tomato, red onion and olives. cover and refrigerate overnight before serving.
- 3 variation: add ¼ cup champagne or wine vinegar to this to make a vinaigrette dressing.
