Green Pea And Quinoa Salad

Ingredients

  • Servings: 4
  • 3 cups cooked quinoa, cooled
  • 2 cups peas
  • 1 cup chopped red radish
  • 1 2/3 cups canned chick-peas, drained and rinsed
  • 1/3 cup buttermilk
  • 1 tablespoon olive oil
  • 1 tablespoon wine vinegar
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh dill
  • salt and pepper

Recipe

  • 1 in a large bowl combine quinoa, peas, radishes and chickpeas.
  • 2 in a small bowl, whisk together buttermilk, oil and vinegar. stir in cheese and dill.
  • 3 add to quinoa mixture and toss to coat. season to taste with salt and pepper. cover and refrigerate for 30 minutes.
