Green Pea And Quinoa Salad

Ingredients

- 3 cups cooked quinoa, cooled
- 2 cups peas
- 1 cup chopped red radish
- 1 2/3 cups canned chick-peas, drained and rinsed
- 1/3 cup buttermilk
- 1 tablespoon olive oil
- 1 tablespoon wine vinegar
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh dill
- salt and pepper
Recipe
- 1 in a large bowl combine quinoa, peas, radishes and chickpeas.
- 2 in a small bowl, whisk together buttermilk, oil and vinegar. stir in cheese and dill.
- 3 add to quinoa mixture and toss to coat. season to taste with salt and pepper. cover and refrigerate for 30 minutes.
