Jitomates Con Alcaparras (tomato And Capers Salad)

Ingredients

  • Servings: 8
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lime juice
  • 1/4 teaspoon minced garlic
  • salt
  • pepper
  • 1/4 cup ice water
  • 1/4 cup onion, thinly sliced
  • ice water
  • romaine lettuce leaf
  • 4 large tomatoes, peeled and sliced
  • 1/4 cup capers, drained and rinsed

Recipe

  • 1 combine all dressing ingredients and mix well.
  • 2 strain and set aside.
  • 3 place onion slices in ice water to cover.
  • 4 let stand 5 minutes.
  • 5 drain well.
  • 6 line a chilled serving platter with romaine leaves, preferably the pale inner leaves for color contrast.
  • 7 place tomatoes on top of lettuce.
  • 8 top with onion slices.
  • 9 top with capers.
  • 10 spoon dressing over salad.
