Jitomates Con Alcaparras (tomato And Capers Salad)

Ingredients

- 1/4 cup extra-virgin olive oil
- 2 tablespoons lime juice
- 1/4 teaspoon minced garlic
- salt
- pepper
- 1/4 cup ice water
- 1/4 cup onion, thinly sliced
- ice water
- romaine lettuce leaf
- 4 large tomatoes, peeled and sliced
- 1/4 cup capers, drained and rinsed
Recipe
- 1 combine all dressing ingredients and mix well.
- 2 strain and set aside.
- 3 place onion slices in ice water to cover.
- 4 let stand 5 minutes.
- 5 drain well.
- 6 line a chilled serving platter with romaine leaves, preferably the pale inner leaves for color contrast.
- 7 place tomatoes on top of lettuce.
- 8 top with onion slices.
- 9 top with capers.
- 10 spoon dressing over salad.
