Kicked Up Better For You Egg Salad

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 2 hard-boiled eggs, diced
  • 4 hard boiled egg whites, diced
  • 1/3 cup diced carrot
  • 1/2 cup diced celery
  • 1/4 cup diced kosher dill pickle
  • 5 green olives, diced
  • 1/2 cup light mayonnaise
  • salt and pepper
  • 4 cups romaine lettuce
  • 4 flour tortillas, taco size

Recipe

  • 1 mix all ingredients together except lettuce and tortillas.
  • 2 divide salad into fourths.
  • 3 make four wraps. each wrap gets 1 cup of romaine lettuce.
