Mandarin Orange Vinaigrette

Ingredients

  • 8 ounces mandarin oranges
  • 1/4 cup red wine vinegar or 1/4 cup cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey
  • 2/3 cup vegetable oil

Recipe

  • 1 drain the oranges and put them in a blender or food processor. add the vinegar, salt, and black pepper. with the motor running, add the honey and oil in a thin stream through the feed tube. process until thoroughly blended.
  • 2 serve at once or cover and refrigerate until ready to serve, up to 2 weeks. (if the dressing separates while standing, shake it well to recombine before serving).
