Mandarin Orange Vinaigrette

Ingredients
- 8 ounces mandarin oranges
- 1/4 cup red wine vinegar or 1/4 cup cider vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon honey
- 2/3 cup vegetable oil
Recipe
- 1 drain the oranges and put them in a blender or food processor. add the vinegar, salt, and black pepper. with the motor running, add the honey and oil in a thin stream through the feed tube. process until thoroughly blended.
- 2 serve at once or cover and refrigerate until ready to serve, up to 2 weeks. (if the dressing separates while standing, shake it well to recombine before serving).
