Green Pea Salad

Ingredients
- 2 (10 ounce) packages frozen peas, thawed
- 4 -5 slices crisply cooked bacon, crumbled
- 1/3 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup chopped green onions or 1/4 cup chives
- 1/4 cup shredded parmesan cheese
- salt and pepper
- mint or fresh dill, as desired
Recipe
- 1 cook peas until barely tender; drain well and chill. combine all ingredients and refrigerate until ready to serve.
- 2 serve on lettuce.
- 3 use as a pita filling
- 4 serve as a side dish
- 5 add a cup of cooked pasta and 1 tsp more of mayo and sour cream toss together for pasta salad.
- 6 option: try this warm too! just drain the peas and add the rest and cook over low heat on the stove until the cheese is melty and everything is combined.
