Herb Salad Dressing Claudio's

Ingredients

  • 2 cups loosely packed spinach
  • 1 cup loosely packed fresh parsley leaves
  • 1/3-1/2 cup cider vinegar (or to taste)
  • 1/2 cup loosely packed fresh basil leaf
  • 1/4 avocado, peeled and chopped
  • 6 garlic cloves
  • 1 1/2 tablespoons lemon juice
  • 1 1/2 teaspoons salt and pepper (each or to taste)
  • 1/2 teaspoon ground cumin
  • 1 pinch cayenne
  • 1 cup olive oil (plus 2 tbls)
  • 1 cup safflower oil (plus 2 tbls)

Recipe

  • 1 in a blender or food processor fitted with the steel blade blend in all ingredients except oil.
  • 2 with motor running add 1 cup plus 2 tablespoons each of olive oil and the safflower oil in a stream.
  • 3 blend until mixture is smooth and thick.
  • 4 if the dressing separates, beat it gradually into a large egg yolk. makes about 3 1/4 cups.
