Lemon Couscous Salad

Total Time: 33 mins Preparation Time: 25 mins Cook Time: 8 mins

Ingredients

  • Servings: 4
  • 1 cup couscous
  • 6 green onions, chopped
  • 1/2 cup english cucumber, diced
  • 1 cup chickpeas, drained
  • 1/4 cup parsley, chopped
  • 2 tablespoons mint, chopped (or dill)
  • 2 tablespoons olive oil
  • 1 lemon, zest and juice of, grated
  • salt & freshly ground black pepper
  • 1/3 cup hazelnuts, toasted and chopped

Recipe

  • 1 in a medium saucepan, bring 2 cups water to boil. stir in couscous and immediately remove from heat. cover and let stand until water is absorbed, about 8 minutes. fluff with a fork and transfer to a large bowl.
  • 2 stir in green onions, cucumber, chickpeas, parsley, mint, oil, lemon zest and lemon juice.
  • 3 season to taste with salt and pepper.
  • 4 cover and chill overnight to let flavors develop. serve topped with hazelnuts.
