Lemon Couscous Salad

Ingredients
- Servings: 4
- 1 cup couscous
- 6 green onions, chopped
- 1/2 cup english cucumber, diced
- 1 cup chickpeas, drained
- 1/4 cup parsley, chopped
- 2 tablespoons mint, chopped (or dill)
- 2 tablespoons olive oil
- 1 lemon, zest and juice of, grated
- salt & freshly ground black pepper
- 1/3 cup hazelnuts, toasted and chopped
Recipe
- 1 in a medium saucepan, bring 2 cups water to boil. stir in couscous and immediately remove from heat. cover and let stand until water is absorbed, about 8 minutes. fluff with a fork and transfer to a large bowl.
- 2 stir in green onions, cucumber, chickpeas, parsley, mint, oil, lemon zest and lemon juice.
- 3 season to taste with salt and pepper.
- 4 cover and chill overnight to let flavors develop. serve topped with hazelnuts.
