Mandarin Salad

Ingredients

  • Servings: 4
  • 1/4 cup sliced almonds
  • 4 teaspoons sugar
  • 1/4 head lettuce, torn into bite size pieces
  • 1/4 bunch romaine lettuce, torn into bite size pieces
  • 2 stalks celery, chopped
  • 2 green onions, with tops thinly sliced
  • 1 (11 ounce) can mandarin orange segments, drained
  • 1/4 cup vegetable oil
  • 2 tablespoons sugar
  • 2 tablespoons vinegar
  • 1 tablespoon snipped parsley
  • 1/2 teaspoon salt
  • 1 dash pepper
  • 1 dash red pepper sauce

Recipe

  • 1 dressing: shake all ingredients in a tightly covered jar;refrigerate.
  • 2 salad: cook almonds and sugar over low haest,stirring constanly,until sugar is melted and almonds are coated.
  • 3 cool and break apart.
  • 4 store at room temp.
  • 5 place lettuce and romaine in a plastic bag;add celery and onions.
  • 6 pour sweet and sour dressing in the bag;add orange segments.
  • 7 close bag tightly and shake till coated.
  • 8 add almonds and enjoy!
