Herbed New Potato Salad

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 2 lbs small new potatoes
  • 2 tablespoons red wine vinegar
  • 1 cup sliced celery
  • 1/2 cup scallion
  • 2 tablespoons chopped parsley
  • 2/3 cup plain yogurt
  • 2/3 cup mayonnaise
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt

Recipe

  • 1 scrub potatoes well. boil in just enough water to cover, until just tender; 15 minutes.
  • 2 drain well and cool.
  • 3 cut into halves or quarters. place in a large bowl.
  • 4 sprinkle with vinegar and toss to combine. let stand 10 minutes, tossing a few times.
  • 5 add celery, scallions and parsley.
  • 6 in a small bowl, mix together yogurt, mayonnaise, dry mustard and salt. add potatoes and toss to coat well.
  • 7 cover and refrigerate at least 2 hours before serving.
