Herbed New Potato Salad

Ingredients

- 2 lbs small new potatoes
- 2 tablespoons red wine vinegar
- 1 cup sliced celery
- 1/2 cup scallion
- 2 tablespoons chopped parsley
- 2/3 cup plain yogurt
- 2/3 cup mayonnaise
- 1 teaspoon dry mustard
- 1/2 teaspoon salt
Recipe
- 1 scrub potatoes well. boil in just enough water to cover, until just tender; 15 minutes.
- 2 drain well and cool.
- 3 cut into halves or quarters. place in a large bowl.
- 4 sprinkle with vinegar and toss to combine. let stand 10 minutes, tossing a few times.
- 5 add celery, scallions and parsley.
- 6 in a small bowl, mix together yogurt, mayonnaise, dry mustard and salt. add potatoes and toss to coat well.
- 7 cover and refrigerate at least 2 hours before serving.
