Hot Chicken Salad

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 cups cooked chicken, chopped
  • 8 ounces water chestnuts, chopped
  • 1 cup celery, chopped
  • 1/2 cup sliced almonds, toasted
  • 2 ounces pimientos, chopped
  • 1 tablespoon onion, minced
  • 1 cup mayonnaise
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 ounces cheddar cheese, shredded
  • 1 1/3 cups french fried onion rings

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a large bowl, add chicken, water chestnuts, celery, almonds, pimentos and onion.
  • 3 in a small bowl, mix mayonnaise, lemon juice, salt and pepper.
  • 4 combine chicken and vegetables with the mayonnaise mixture and pour into a 2qt. baking dish.
  • 5 sprinkle cheese and onion rings on top.
  • 6 bake uncovered for 30 minutes.
  • 7 serve hot.
