Hot Chicken Salad

Ingredients

- 2 cups cooked chicken, chopped
- 8 ounces water chestnuts, chopped
- 1 cup celery, chopped
- 1/2 cup sliced almonds, toasted
- 2 ounces pimientos, chopped
- 1 tablespoon onion, minced
- 1 cup mayonnaise
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 8 ounces cheddar cheese, shredded
- 1 1/3 cups french fried onion rings
Recipe
- 1 preheat oven to 350 degrees.
- 2 in a large bowl, add chicken, water chestnuts, celery, almonds, pimentos and onion.
- 3 in a small bowl, mix mayonnaise, lemon juice, salt and pepper.
- 4 combine chicken and vegetables with the mayonnaise mixture and pour into a 2qt. baking dish.
- 5 sprinkle cheese and onion rings on top.
- 6 bake uncovered for 30 minutes.
- 7 serve hot.
