Knox Potato Salad

Total Time: 3 hrs Preparation Time: 1 hr Cook Time: 2 hrs

Ingredients

  • 8 cups potatoes, cooked, cooled and sliced
  • 8 eggs, hard boiled and chopped
  • 2 cups celery, chopped
  • 1/2 cup green onion, chopped
  • 1 cup buttermilk
  • 2 (1/4 ounce) envelopes unflavored gelatin
  • 2 cups mayonnaise
  • 1 cup sour cream
  • 1 tablespoon mustard
  • 2 tablespoons sugar
  • 1 tablespoon salt

Recipe

  • 1 combine potatoes, eggs, celery and onions in a large bowl.
  • 2 heat buttermilk and dissolve gelatin in it using a wire whip to get out any lumps.
  • 3 add sour cream, mayonnaise, sugar, mustard and salt to buttermilk mixture.
  • 4 pour buttermilk mixture over potatoes and chill for several hours. it will be very soupy but will set up when chilled.
