Knox Potato Salad

Ingredients
- 8 cups potatoes, cooked, cooled and sliced
- 8 eggs, hard boiled and chopped
- 2 cups celery, chopped
- 1/2 cup green onion, chopped
- 1 cup buttermilk
- 2 (1/4 ounce) envelopes unflavored gelatin
- 2 cups mayonnaise
- 1 cup sour cream
- 1 tablespoon mustard
- 2 tablespoons sugar
- 1 tablespoon salt
Recipe
- 1 combine potatoes, eggs, celery and onions in a large bowl.
- 2 heat buttermilk and dissolve gelatin in it using a wire whip to get out any lumps.
- 3 add sour cream, mayonnaise, sugar, mustard and salt to buttermilk mixture.
- 4 pour buttermilk mixture over potatoes and chill for several hours. it will be very soupy but will set up when chilled.
