Kumara & Citrus Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 500 g kumara
  • 1 red onion, use 3 thin slices only
  • 2 oranges
  • 2 teaspoons parsley, chopped
  • 1/4 cup olive oil
  • 1 tablespoon wine vinegar
  • 1/2 teaspoon salt
  • black pepper, freshly ground

Recipe

  • 1 cook peeled kumara in salted water until tender.
  • 2 drain. slice kumara and place in a salad bowl.
  • 3 break onion slices into rings.
  • 4 peel oranges and remove all the pith. slice croswise.
  • 5 add onion rings and oranges slices to the kumara.
  • 6 place parsley, oil and vinegar into a jar and shake to combine.
  • 7 pour dresing over the salad, toss gently and chill.
