Lemon Tarragon Chicken Salad

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 1/4 lbs boneless skinless chicken breasts
  • 3/4 cup finely chopped celery
  • 1/2 cup mayonnaise
  • 1/4 cup chopped red onion
  • 1 -2 tablespoon minced fresh tarragon
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Recipe

  • 1 bring a large pan of water to boil.
  • 2 add breasts, reduce heat to med/low, cover and simmer until chicken is just cooked through (about 12 minutes).
  • 3 cool.
  • 4 mix celery, mayonnaise, onion, tarragon (start with 1 t. and increase as taste dictates), lemon juice, and zest.
  • 5 cut chicken into 1/2 inch cubes and add to mayonnaise mixture.
  • 6 season with salt and pepper.
