Frances' Potato Salad

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 cup mayonnaise
  • 1 cup finely chopped onion
  • 3 tablespoons tarragon vinegar or 3 tablespoons vinegar (is ok too)
  • 2 teaspoons salt
  • 1/2 teaspoon ground pepper
  • 1 tablespoon sweet pickle relish
  • 2 hard-boiled eggs, chopped
  • 3 lbs potatoes, peeled,sliced and cooked
  • 2 cups chopped celery
  • paprika, to taste

Recipe

  • 1 cook potatoes and allow them to cool.
  • 2 in a large bowl, stir together mayonnaise, onion, vinegar, salt, pepper, pickle relish and chopped eggs.
  • 3 add potatoes and celery.
  • 4 toss to coat well.
  • 5 cover and refrigerate 4 hours or overnight.
  • 6 sprinkle with paprika before serving.
