Cold Lentil Salad

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 1
  • 1 cup lentils
  • 1 tablespoon red wine vinegar
  • 2 teaspoons dijon mustard
  • 2 tomatoes, chopped, peeled (optional)
  • 2 -3 green onions, chopped
  • 2 tablespoons parsley, chopped

Recipe

  • 1 cook lentils in water for 30 to 45 minutes (no salt) drain.
  • 2 blend in other things except for tomatoes, parsley and green onions. chill.
  • 3 add the remaining ingredients.
