Crispy Chilli Whitebail With Green Mango Salad

Ingredients
- Servings: 4
- 600 g whitebait
- 1/2 cup flour
- 2 teaspoons chili powder
- vegetable oil (for deep frying)
- 2 green mangoes (peeled and finely shredded)
- 1/2 cup coriander (leaves)
- 1/3 cup mint (leaves finely shredded)
- 1 chili (red cut into fine shreds)
- 1 lebanese cucumber (cut into fine ribbons)
- 2 tablespoons fish sauce
- 1 lime (juice of)
- 1 tablespoon palm sugar (or brown sugar)
- 1 teaspoon garlic
Recipe
- 1 for the whitebait, combine fthe flour and chilli on a sheet of paper or in a plastic bag and coat the whitebait lightly.
- 2 heat the oil to hot and deep fry the whitebait in batches until they are golden brown and drain well.
- 3 for the salad, combine the rest of the ingredients and mix together lightly.
- 4 serve a portion of the whitebait and a portion of the salad.(looks good if you pile the bait on top of the salad).
