Crispy Chilli Whitebail With Green Mango Salad

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 600 g whitebait
  • 1/2 cup flour
  • 2 teaspoons chili powder
  • vegetable oil (for deep frying)
  • 2 green mangoes (peeled and finely shredded)
  • 1/2 cup coriander (leaves)
  • 1/3 cup mint (leaves finely shredded)
  • 1 chili (red cut into fine shreds)
  • 1 lebanese cucumber (cut into fine ribbons)
  • 2 tablespoons fish sauce
  • 1 lime (juice of)
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 teaspoon garlic

Recipe

  • 1 for the whitebait, combine fthe flour and chilli on a sheet of paper or in a plastic bag and coat the whitebait lightly.
  • 2 heat the oil to hot and deep fry the whitebait in batches until they are golden brown and drain well.
  • 3 for the salad, combine the rest of the ingredients and mix together lightly.
  • 4 serve a portion of the whitebait and a portion of the salad.(looks good if you pile the bait on top of the salad).
