Gazpacho Salad Pizza

Ingredients
- Servings: 4
- 1 1/2 lbs fresh garden tomatoes
- 1 cup chopped peeled cucumber (1 medium)
- 1 cup chopped green pepper (1 large)
- 1/2 cup finely chopped onion
- 1/2 cup bottled italian dressing
- 1 (10 ounce) package prepared pizza crust
- 1 cup shredded monterey jack pepper cheese (4 ounces)
Recipe
- 1 preheat oven to 400ºf.
- 2 use tomatoes held at room temperature until fully ripe.
- 3 coarsely chop tomatoes (makes about 4-1/2 cups).
- 4 in a large bowl, toss tomatoes, cucumber, green pepper, onion and italian dressing until well combined.
- 5 place pizza crust on a baking sheet.
- 6 sprinkle with monterey jack cheese.
- 7 bake until cheese melts, about 10 minutes.
- 8 remove from oven and top with tomato mixture.
- 9 serve immediately.
