Gazpacho Salad Pizza

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs fresh garden tomatoes
  • 1 cup chopped peeled cucumber (1 medium)
  • 1 cup chopped green pepper (1 large)
  • 1/2 cup finely chopped onion
  • 1/2 cup bottled italian dressing
  • 1 (10 ounce) package prepared pizza crust
  • 1 cup shredded monterey jack pepper cheese (4 ounces)

Recipe

  • 1 preheat oven to 400ºf.
  • 2 use tomatoes held at room temperature until fully ripe.
  • 3 coarsely chop tomatoes (makes about 4-1/2 cups).
  • 4 in a large bowl, toss tomatoes, cucumber, green pepper, onion and italian dressing until well combined.
  • 5 place pizza crust on a baking sheet.
  • 6 sprinkle with monterey jack cheese.
  • 7 bake until cheese melts, about 10 minutes.
  • 8 remove from oven and top with tomato mixture.
  • 9 serve immediately.
