Insalata Caprese (or Caprese Salad) With Balsamic Reduction

Ingredients
- Servings: 2
- 1 pint grape tomatoes, halved
- 8 ounces fresh mozzarella cheese, sliced 1/4-inch thick
- fresh basil, chopped
- 1/2 cup balsamic vinegar
- 1/2 tablespoon sugar
Recipe
- 1 set out tomatoes and cheese (i like them to be room temperature, just personal preference).
- 2 stir balsamic vinegar and sugar together in a small, heavy saucepan. (i'm sure you could substitute some other form of sweetener, but i've never tried it).
- 3 bring to boiling over med-high heat; simmer for 10 minutes, stirring occasionally.
- 4 while reducing vinegar, cut up other ingredients and arrange nicely on a plate.
- 5 drizzle with balsamic reduction.
- 6 serve immediately and enjoy!
