Insalata Caprese (or Caprese Salad) With Balsamic Reduction

Ingredients

  • Servings: 2
  • 1 pint grape tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced 1/4-inch thick
  • fresh basil, chopped
  • 1/2 cup balsamic vinegar
  • 1/2 tablespoon sugar

Recipe

  • 1 set out tomatoes and cheese (i like them to be room temperature, just personal preference).
  • 2 stir balsamic vinegar and sugar together in a small, heavy saucepan. (i'm sure you could substitute some other form of sweetener, but i've never tried it).
  • 3 bring to boiling over med-high heat; simmer for 10 minutes, stirring occasionally.
  • 4 while reducing vinegar, cut up other ingredients and arrange nicely on a plate.
  • 5 drizzle with balsamic reduction.
  • 6 serve immediately and enjoy!
