Jicama-orange-pepper Salad

Ingredients

  • 1/4 cup vinegar
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon pepper
  • 1/4 teaspoon chili powder
  • 2 cups jicama, peeled, julienne cut
  • 1 1/2 cups bell peppers, julienne cut
  • 4 large oranges, peeled and sectioned

Recipe

  • 1 combine vinegar, oil, sugar, vinegar, chili powder in a large bowl and whisk until blended.
  • 2 add jicama, pepper, and orange.
  • 3 toss gently to coat and chill until ready to serve.
