Not Your Average Tabouli Salad

Ingredients
- Servings: 4
- 1 medium sized cauliflower
- 1 green pepper, diced
- 1 large tomato, seeded and diced
- 3 green onions, sliced
- 1 bunch parsley, chopped
- 2 tablespoons chopped mint
- 1/3 cup fresh lemon juice
- 3 tablespoons oil
- 2 tablespoons soy sauce
- salt and pepper, to taste
Recipe
- 1 clean and trim cauliflower.
- 2 place cauliflower in large bowl of a food processor.
- 3 pulse until grain size pieces form.
- 4 discard any large chunks that won't process.
- 5 put in large mixing bowl and add.
- 6 rest of the vegetables.
- 7 combine dressing ingredients and toss with vegetables.
- 8 adjust seasoning.
- 9 serve.
