Not Your Average Tabouli Salad

Ingredients

  • Servings: 4
  • 1 medium sized cauliflower
  • 1 green pepper, diced
  • 1 large tomato, seeded and diced
  • 3 green onions, sliced
  • 1 bunch parsley, chopped
  • 2 tablespoons chopped mint
  • 1/3 cup fresh lemon juice
  • 3 tablespoons oil
  • 2 tablespoons soy sauce
  • salt and pepper, to taste

Recipe

  • 1 clean and trim cauliflower.
  • 2 place cauliflower in large bowl of a food processor.
  • 3 pulse until grain size pieces form.
  • 4 discard any large chunks that won't process.
  • 5 put in large mixing bowl and add.
  • 6 rest of the vegetables.
  • 7 combine dressing ingredients and toss with vegetables.
  • 8 adjust seasoning.
  • 9 serve.
